Seafood Chopsuey

A comforting and flavorful dish made with tender chicken simmered in coconut milk, potatoes, carrots, and bell peppers, spiced with curry powder for that warm, rich taste. Perfect with steamed rice!

Ingredients

For 4 Serves

  • 1 kg chicken (cut into serving pieces)

  • 2 medium potatoes, cubed

  • 1 large carrot, sliced

  • 1 red bell pepper, sliced

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 thumb-sized ginger, sliced

  • 2 tbsp curry powder

  • 1 cup coconut milk

  • 1 cup water

  • 2 tbsp cooking oil

  • Salt & pepper to taste

Step 1 - Sauté the Aromatics

Heat oil in a pan. Sauté onion, garlic, and ginger until fragrant.

Step 2: Cook the Chicken

Add chicken pieces and cook until lightly browned. Stir in curry powder and mix well.

Step 3: Add Vegetables & Simmer

Pour in coconut milk and water. Add potatoes and carrots. Simmer until chicken is tender and veggies are cooked.

Step 4: Finish & Serve

Add bell peppers, season with salt and pepper, and cook for another 2 minutes. Serve hot with steamed rice.
